今天我們的烘豆桶裡迎來了非常特別的稀有品。安先生的朋友 Bruce 特別委託我們烘焙一小批他親自發酵的生豆。在乾燥前對咖啡果實進行精準控制的發酵,是咖啡處理工藝中的最高境界,能將咖啡豆中令人驚豔且複雜的香氣完全激發出來。這是一道真正的特色風味,我們自己也迫不及待想品嚐了!這是工藝技術與大膽實驗精神的完美結合。

Mr. An is back at the roaster today. For us, there’s absolutely nothing better: at home, we exclusively drink our own self-roasted coffee. Once you find that perfect balance of roasting time and temperature for the bean, you just don’t want anything else in your mug. Craftsmanship you can taste every morning!
A true highlight on the roasting drum: Bruce’s self-fermented coffee beans!
Today, we have a very special rarity in the drum. Mr. An’s friend Bruce entrusted us with an exclusive batch of his self-fermented coffee beans. Controlled fermentation of the coffee cherries before drying is the ultimate masterclass, coaxing incredibly complex aromas out of the bean. A true specialty that we are incredibly excited about! This is where craftsmanship meets pure experimentation.

Taiwan is not only world-famous for its excellent tea, but has also long become a real hotspot for coffee lovers. Coffee cultivation here has a long tradition and is currently experiencing a massive renaissance. Thanks to the humid, sub-tropical climate and nutrient-rich soils—stretching from the mountains of Alishan to the wild East Coast—sensational specialty coffees thrive here. Since the growing areas are often small and steep, almost everything is managed through pure, family-run hand labor. The result is extremely high-quality, often pleasantly mild coffees that surprise with fine floral, fruity, or deep, winey notes, thanks to innovative processing methods like Bruce's. Pure terroir!
